Other than the food & Guinness (of course), one of my highlights of attending the recent Guinness By Fire Festival @ Sentul Depot (which took place between 18-20 August) was meeting some of the super-talented and outstanding chefs at the festival. I sat down with the affable foodtrepreneur extraordinaire and culinary innovator, Chef Navin Karu, founder of Ocean Flair Group. Restaurants under the group include Vin’s Manja, Velvet Lounge and Big Boyz Barbecue. Big Boyz Barbecue was one of the most popular stalls at the festival as there were dozens of customers queuing up patiently for a taste of their mouth-watering fare. Big Boyz Barbecue prides themselves on producing foods sans additives, preservatives and artificial ingredients. I was one of their customers that night thoroughly impressed and awed by their Guinness-infused ‘Burgers & Dawgs’. I was even more impressed with Chef Navin who was absolutely hands-on, toiling over the grill to cook up one of the most memorable food of Guinness Flavour By Fire. Most of all, I love how passionate and enthusiastic Chef Navin is about his business and can clearly see that he wants to give the best of the best to his customers.

We make everything from scratch and own our own deli. We make our own burgers, sausages and meatballs. Everything is made pure and non-processed. Our mayo and other sauces are made without additives, colouring or preservatives. They are all on ice.

What can diners expect from Big Boyz Barbecue at Guinness Flavour By Fire?

There’s Moroccan Spiced Lamb Kebab with Caesar Anchovy Dressing and a Guinness-infused onion compote. There’s Lamb & Beef Purist, we used 100% meat. For Lamb Purist, we used lamb shoulder and for the Beef Purist, we use beef brisket with salt & pepper.

We also have a vegetarian patty (Vegetarian Pablo), Guinness smoked chicken thigh, it’s smoky, juicy and tender, glazed with Guinness sauce.

Our Bumba Beef Hot Dog is served with mozzarella cheese and garlic aoili.

Our sausages are wrapped in lamb intestine.

Then there’s the Roman Chicken Hot Dog spiced with smoked paprika, garlic and served in a Laugen Pretzel.

There’s also a Lamb Chilli Con Carne.
