Ramadan buffets will be starting next month at just about every hotel and Parkroyal KL is no exception. At the hotel’s Chatz Brasserie, there will be a special Ramadan promotion from 27 April till 20 May 2020. This year the theme for the Ramadan season is ‘Jom Iftar’ @ Chatz Brasserie. Over 50 dishes will be featured with a nostalgia theme. The dishes reflect mother and grandmother’s cooking & recipes.
Diners at Chatz Brasserie can take a gastronomic journey around Malaysia to enjoy a variety of Malay traditional flavours with live food stall stations. The specialties are Ikan Goreng Kari Pulleh Rangup Johor Berlada Hitam by Chef Isham, Special Nenda Ayam Goreng Inchi Kabin by Chef Hazmi, Kambing Panggang Cik Mek Molek Mewangi by Chef Razalee, Gulai Kawah Pedas Tetel Omak Den by Chef Khairulizam and by popular demand, Chef Stewart will bring back Mi Kolok Bumi Kenyalang.
One of my favourites from this buffet is the Mi Kolok Bumi Kenyalang by Chef Stewart. The noodles are from Kuching and so is Chef Stewart. I had two bowls of this and if I had enough space in my stomach, I would have had a third. The sauce is appetising, the noodles anre springy and everything is so tasty, with crushed garlic, shallot, sliced chicken char siew, mince chicken, spring onion and shallot oil. Thumbs up for this one!
This fried fish is marinated with black pepper and curry leaf crushed and blended together with spices and tapioca flour. This recipe is created by the great grandmother of Chef Isham. Old people believe that black pepper is good for health and drives away bad spirits. There is a choice of mackerel, halibut slices or pomfret.
Inchi Kabin is a Nyonya style fried chicken cooked on ships for sailors. Special Nenda Ayam Goreng Inchi Kabin by Chef Hazmi is flavoured with fennel, cumin, coriander, turmeric, black pepper, chili powder, kaffir lime leaves and coconut milk. It’s fried using a 32 inches diameter long big Kawah.
Gulai Kawah Pedas Tetel Omak Den by Chef Khairulizam is braised beef cooked in coconut milk, cardamom, cloves, star anise and enhanced with kerisik, gula melaka and asam gelugor. Braised till meat is tender and gravy is thick.
Kambing Panggang Cik Mek Molek Mewangi by Chef Razalee is really good as it’s so tender. This is a Kelantan style barbeque roast lamb. It’s been marinated in freshly blended pineapple juice, honey and freshly grounded Tanah Merah spices. Eat it with slices of roasted pineapple which has been cooked with honey and cinnamon. Goes well with Arab rice (also known as Mandy basmati rice) and bread spread with yoghurt.
For dessert, there is an assortment of eclairs such as Neslo Cream with Caramelised Peanut, Teh Tarik Flavour Cream with Chocolate, Pandan Cream with Gula Melaka and Tenom Coffee Cream with Almond Flake.
‘Jom Iftar’ at Chatz Brasserie Early Bird promotion will be available from 16 March till 26 April 2020 at RM93nett per person. From 27 April onwards, it will be priced at RM132nett for adults and RM66nett for children (from 5 to 11 years old).
